Vanilla and Rose Flavoured Sugared Almond Dragées

At Pietro Romanengo Confectionery, we use selected Avola almonds from Sicily to create our traditional sugared almond "confetti". With their typical flattened, elongated shape and cinnamon-coloured skin, the nuts are lightly roasted and then coated with pure sugar syrup. Maintaining the skins in the roasting process gives the sugared almonds a distinctive taste. The pink dragées are flavoured with rose essence, while the pale yellow ones are vanilla flavoured.
