At Pietro Romanengo Confectionery, we use only Avola almonds from Sicily to create our traditional sugared almond dragées, or "confetti". With their typical flattened, elongated shape and cinnamon-coloured skin, the nuts are lightly roasted and then coated with pure sugar syrup. Maintaining the skins in the process of roasting gives the sugared almonds a distinctive taste that balances the almondy sweetness with a hint of burnt toast.
This traditional specialty hails directly from the ancient material culture of Eastern peoples who knew how to preserve parts of flowers, fruits, seeds, leaves and plants with sugar. During the Middle Ages in Europe, these sweets known as "chamber spices" were exchanged as highly regarded gifts, particularly to ingratiate judges, hence the old saying: "Non deliberatur donec solvetur species".
