At the heart of this sugar-coated specialty, Pietro Romanengo Confectionery's master artisans place a tiny pine nut. This precious cream-coloured edible seed, used in a variety of typical dishes from Liguria, including pesto sauce, originates inside a thick, dark husk nestled within the large cone of the Italian Stone Pine or Umbrella Pine tree - pinus pinea - native to the Mediterranean region. Popularly known as "pinocchio" in olden days, the kernel's delicate resiny flavour is captured in our confectionery's dragées with a pure sugar syrup coating that preserves both the unique taste and aroma.
This traditional specialty hails directly from the ancient material culture of Eastern peoples who knew how to preserve parts of flowers, fruits, seeds, leaves and plants with sugar. During the Middle Ages in Europe, these sweets known as "chamber spices" were exchanged as highly regarded gifts, particularly to ingratiate judges, hence the old saying: "Non deliberatur donec solvetur species".
