This full, rich milk chocolate is created in our Chocolate Atelier following the Confectionery's traditional recipes and methods. It is produced with cocoa, milk and sugar, while the cocoa butter is amalgamated at the conching stage. No soy lecithin is added. Pietro Romanengo Confectionery's master Chocolatiers start with the finest cocoa beans to produce chocolate the old-fashioned, artisan way, with no additives whatsover, just pure cocoa, sugar, cocoa butter and milk. Following the traditional method, the cocoa paste is first slowly refined on a slab of granite stone and then undergoes a process known as conching, blending the paste non-stop for 3 days and 3 nights, until the mass reaches a velvety-smooth consistency or "velouté", as described in the authoritative French texts of the early 1900s.
